做法·:将猪蹄洗净,刷上一层酱油,下锅炸,将皮子炸至金黄,捞出备用。将就锅里那油,加入几粒干海椒,花椒粒,老姜片,适量酱油,炒几下,加入少量水,熬制几分钟,加入鸡精,味精,估计盐味合适,将汁浇在炸好的猪蹄上。然后上锅蒸50分钟,备用;
