先去砂: 用开水烫皮再用布抹去鱼皮和砂,切成大块备用.\4i%L`pxs

配料:姜丝, 葱白,葱花,小红辣椒切碎, 豆豉

盘子里可以先铺一点姜丝和葱白丝. 取鱼中间的几大块, 切鱼片,一侧稍微不要切断,象开屏状铺在盘子里围成一圈. 姜丝, 葱白丝, 小红辣椒,加料酒和盐搅拌, 撒在铺好的鱼上,腌一下.
