1、鱼头和鱼尾切下,鱼头劈开备用。鱼身中有一条白色线头将它慢慢拉出,鱼就不会有土腥味了。

2、从鱼的脊背入刀,将鱼肉沿鱼骨片下。鱼肉片成蝴蝶片,鱼脊骨垛称块,肋骨切成块。
